Preheat oven to 180°C/375°F.
Grease a bundt pan or 9 inch cake pan. Set aside.
In a mixing bowl, whisk together the eggs, vanilla extract, almond essence, brown sugar and vegetable oil.
Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt.
Gradually mix in the coconut milk, dark rum and raisins.
Pour the batter into the pan and bake for 30-35 minutes.
Let it cool completely then decorate to liking or enjoy plain.
