Along with rum & raisin ice cream being very tasty, this cake is also very tasty. Adding rum to cake made the cake really moist and rich. Also by adding rum to your cake will allow the cake to be preserve for a longer period.

Simple Caribbean Rum & Raisin Cake

This Caribbean rum & raisin cake will be your favorite cake once you try it. It is made with dark rum, raisins and coconut milk.

Ingredients

  • 2 medium Eggs
  • 2 cups All-purpose flour sifted
  • 1/2 cup Dark rum
  • 1/3 cup Brown sugar
  • 1/4 cup Coconut milk
  • 1/4 cup Vegetable oil
  • 1 & 1/2 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp Almond essence
  • 1/4 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/4 tsp Allspice
  • 1/4 tsp Cinnamon

Instructions

  • Preheat oven to 180°C/375°F.
  • Grease a bundt pan or 9 inch cake pan. Set aside.
  • In a mixing bowl, whisk together the eggs, vanilla extract, almond essence, brown sugar and vegetable oil.
  • Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt.
  • Gradually mix in the coconut milk, dark rum and raisins.
  • Pour the batter into the pan and bake for 30-35 minutes.
  • Let it cool completely then decorate to liking or enjoy plain.
