This quick Caribbean rice and peas recipe is a quicker version of the traditional recipe.

Usually rice and peas is made with dried peas/beans. The peas/beans would be soaked overnight then boiled until they are softened. Once the peas/beans are soft, you had the rice to the pot and cook. Of course the peas/beans are boiled with some herbs such as thyme, parsley, peppers, onion and garlic. This type of rice is usually a big deal for Christmas or at any party.

Since we wanted to do something a bit quicker, we used canned peas/beans instead. Which cuts the cooking time down to more than half. After 20 minutes of cooking, you end up with this delicious quick Caribbean rice and peas.

Quick Caribbean Rice and Peas

If you like rice and peas but hate the cooking time, then this quick Caribbean rice and peas recipe is perfect for you.

Ingredients

  • 15 oz Red beans or any peas of your choice drained
  • 2-3 prigs Fresh parsley
  • 2-3 sprigs Fresh thyme
  • 2 medium Pimento peppers chopped finely
  • 1 small Red or yellow onion chopped finely
  • 1 & 1/2 cups White or brown rice washed
  • 1/2 cup Coconut milk
  • 1/4 cup Water
  • 2 tbsp Vegetable oil
  • 1 tsp Salt

Instructions

  • Warm the vegetable oil in a medium pot. ⁠⁠
  • Cook the pimento peppers, garlic, scallion and onion for 1-2 minutes.⁠⁠
  • Add the beans and cook for another 1-2 minutes.⁠⁠
  • Stir in the coconut milk, water, fresh parsley, fresh thyme and salt.⁠⁠
  • Cover and cook for 10-15 minutes.⁠⁠
