Quick Caribbean Rice and Peas
If you like rice and peas but hate the cooking time, then this quick Caribbean rice and peas recipe is perfect for you.

Red beans or any peas of your choice
drained

Fresh parsley

Fresh thyme

Pimento peppers
chopped finely

Red or yellow onion
chopped finely

White or brown rice
washed

Coconut milk

Instructions
Warm the vegetable oil in a medium pot.
Cook the pimento peppers, garlic, scallion and onion for 1-2 minutes.
Add the beans and cook for another 1-2 minutes.
Stir in the coconut milk, water, fresh parsley, fresh thyme and salt.
Cover and cook for 10-15 minutes.
