Preheat the oven to 180°C/375°F. Grease a loaf pan and set aside.
In a blender, add the plantain chunks and 4 tbsp of whole milk. Blend everything until it is smooth.
In a mixing bowl, whisk the eggs, brown sugar and vegetable oil until light and fluffy.
Using a sifter, sift in the flour, cinnamon, nutmeg, salt, allspice, baking soda and baking powder.
Mix the dry ingredients into the wet ingredients.
Add the puréed plantain and whole milk. Mix everything together.
Pour the batter into the loaf pan and bake for 30-40 minutes or until a toothpick inserted in comes out clean.
