Easy Caribbean Plantain Bread

This easy Caribbean plantain bread is better than banana bread. It is moist, not too sweet and delicious. You will love it.

Ingredients

  • 2 medium Ripe plantains peeled and cut into chunks
  • 2 medium Eggs at room temperature
  • 1 & 1/4 cups All-purpose flour sifted
  • 1/2 cup Brown sugar
  • 1/4 (& 4 tbsp) cup Whole milk at room temperature
  • 1/4 cup Vegetable oil
  • 2 tsp Baking powder
  • 1 & 1/2 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 tsp Fresh or Ground cinnamon
  • 1/2 tsp Fresh or Ground nutmeg
  • 1/4 tsp Ground allspice
  • 1 tsp Almond essence

Instructions

  • Preheat the oven to 180°C/375°F. Grease a loaf pan and set aside.
  • In a blender, add the plantain chunks and 4 tbsp of whole milk. Blend everything until it is smooth.
  • In a mixing bowl, whisk the eggs, brown sugar and vegetable oil until light and fluffy.
  • Using a sifter, sift in the flour, cinnamon, nutmeg, salt, allspice, baking soda and baking powder.
  • Mix the dry ingredients into the wet ingredients.
  • Add the puréed plantain and whole milk. Mix everything together.
  • Pour the batter into the loaf pan and bake for 30-40 minutes or until a toothpick inserted in comes out clean.
