Rice is a common side dish in the Caribbean, we tend to enjoy it frequently. But of course we have to spice it up like this Caribbean Curry Seasoned Rice.

Ingredients
1 & 1/2cupsWhite or brown rice
1-2cupsWater
2tbspCoconut oil
1tbspCurry powder
2mediumCarrots
2mediumPimento peppersliced without the seeds
8 ozPeas in can
1tspSalt
Instructions
Toasting the rice & veggies:
In a medium pot over medium heat, warm the coconut oil then add the garlic, carrots, pimento pepper and rice.
Cook for 2-3 minutes, making sure to stir constantly.
Cooking the rice:
Add the water to the pot, you need enough to cover the rice.
Add the salt and curry powder and stir everything.
Reduce the heat to medium-low heat and let it cook for 7-10 minutes.
Once the rice has done cooking, turn off the heat and stir in the peas.
