Rice is a common side dish in the Caribbean, we tend to enjoy it frequently. But of course we have to spice it up like this Caribbean Curry Seasoned Rice.

It’s no secret that we Island folks like to have rice almost every day, it’s the base of our cuisine. However, being an every day thing it tends to get boring quickly if you just cook it one way. Thankfully this Caribbean Curry Seasoned Rice is anything but boring.

Lately I have been cooking my rice differently every time I cook it. I honestly think you have to constantly switch things up in the kitchen otherwise you will get bored. Rice is one of those things you need switch up every now and then so it won’t get repetitive.

One thing I really like with cooking rice is the ease of it. I think rice is one of the easiest sides you can make. Although rice cookers are widely known, I have never used one and I don’t tend to start doing so anytime soon. I don’t see the need in using one but I don’t knock anyone that uses it.

Before diving into the recipe, I would like to share some TIPS & TRICKS with you guys before diving into the recipe.

TIPS & TRICKS
  • Rice: Although this is the most obvious ingredient in this recipe, I wanted to give some quick tips. The type of rice you use in this dish will impact your results. For many years I have been using white basmati rice and if you want to give it try then go ahead. But if you are using any other type of rice such as brown rice then the cooking time will vary. I do recommend long grain rice for this dish. One thing I recommend doing is washing your rice t least 4 times to release some of the starch.
  • Seasoning: Just like the rice the seasonings used in this recipe are quite simple. The seasonings that I used were salt, coconut oil and curry powder. And to add extra flavor to this dish, I used garlic, pimento pepper, carrots and peas from the can. I like adding the carrots to this because of the sweetness it brings. The curry is primarily for he color and taste but you can use turmeric powder instead.
  • Cooking & toasting the rice: When it comes to the cooking process, it goes quickly and it is easy. I like to start by toasting the rice for that extra flavor and crunch. Toasting the rice just makes everything come out so perfectly. I toasted the rice for 2-3 minutes along with the carrots and peppers then I dd the water and other ingredients. It’s simple.

Caribbean Curry Seasoned Rice

Rice is a common side dish in the Caribbean, we tend to enjoy it frequently. But of course we have to spice it up like this Caribbean Curry Seasoned Rice.

Prep Time 10 minutes
Cook Time 15 minutes

Ingredients

  • 1 & 1/2 cups White or brown rice
  • 1-2 cups Water
  • 2 tbsp Coconut oil
  • 1 tbsp Curry powder
  • 2 medium Carrots
  • 2 medium Pimento pepper sliced without the seeds
  • 8 oz Peas in can
  • 1 tsp Salt

Instructions

Toasting the rice & veggies:

  • In a medium pot over medium heat, warm the coconut oil then add the garlic, carrots, pimento pepper and rice.
  • Cook for 2-3 minutes, making sure to stir constantly.

Cooking the rice:

  • Add the water to the pot, you need enough to cover the rice.
  • Add the salt and curry powder and stir everything.
  • Reduce the heat to medium-low heat and let it cook for 7-10 minutes.
  • Once the rice has done cooking, turn off the heat and stir in the peas.
  • Serve and enjoy!
