Trini-Style Cheesy Bacon Corn Pie

This Trini-Style cheesy bacon corn pie is inspired by the traditional Trinidad corn pie. The classic version is amazing but this one is worth the try.

Ingredients

  • 15 oz Can corn
  • 10-12 Bacon slices
  • 1 & 1/2 cups Evaporated milk
  • 1 cup Water
  • 1 cup Cheddar cheese
  • 1/2 cup Fine yellow cornmeal
  • 2 tbsp Vegetable oil
  • 2 tbsp Butter
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 1 tsp Fresh or dried thyme
  • 1 tsp Fresh or dried parsley
  • 2 Garlic cloves minced
  • 1 Bell pepper diced
  • 1 Medium onion diced
  • 1 Scotch bonnet diced

Instructions

Prep:

  • Preheat oven to 350°F/175°C.
  • Grease a 9x9 inch pan with butter and set side.

Cornmeal mixture:

  • Mix together the cornmeal, water and egg until the mixture is smooth and free of any lumps. Set it aside.

Cooking time:

  • Cook the bacon to your preference then set aside. Be sure to chop them finely.
  • In a medium skillet or frying pan over medium heat, warm the vegetable oil then cook the onion, garlic, scotch bonnet and bell pepper for 2-5 minutes.
  • Drain the corn then add it in, followed by the cornmeal mixture.
  • Stir in the milk and butter. Lower the heat and allow it to cook.
  • Once the milk has been reduced to more than half, stir in the seasonings, cheese and bacon.
  • Remove from the heat and pour the mixture into the greased baking dish.
  • Bake for 30-40 minutes and enjoy!
