Quick Caribbean Yellow Rice and Peas
This quick Caribbean yellow rice and peas recipe of a quicker version of the traditional recipe. Turmeric powder is used to get the yellow color.

Peas (pigeon or lentils)

Coconut milk

Vegetable or coconut oil

Turmeric powder

Salt

Fresh parsley

Pimento pepper
chopped finely

Instructions
In a medium size pot, warm the vegetable or coconut oil.
Add the pimento pepper and garlic. Cook for 1-2 minutes.
Stir in the rice and peas and let that toast for 3-4 minutes.
Pour the coconut milk and the water. Add the salt, parsley, thyme, scallions and turmeric powder. Mix everything together.
Let it cook for 15-20 minutes.
