There is nothing better than a nice refreshing iced tea during the summer/warmer days. This pineapple mint iced tea will be your BFF on those hot days.

Ingredients
Simple syrup:
1cupHot water
1/3cupGranulated sugar
Mint tea:
1cupWater
6-8Fresh mint leaves
Pineapple purée:
1Fresh pineapple
Juice of 1 lime
Instructions
Making the simple syrup:
In a medium sauce pan, boil the water and the sugar together.
Stir constantly and let the sugar dissolve completely. It usually takes 2-3 minutes.
Remove from the heat and let it cool completely.
Making the mint tea:
Add the mint leaves to the hot water, cover and let it steep for 7-10 minutes.
Cutting the pineapple:
Start by slicing off the crown of the pineapple, then cut the skin off from top to bottom.
Slice the sides, making sure to leave the core and discard it.
Cut into chunks then wash it.
Making the juice:
Once the mint tea and simple syrup have cooled, add them to a blender along with the pineapple chunks and lime juice.
Blend everything together for about 2-3 minutes or until it is well blended.
Strain the juice into a pitcher to remove the pulp.
