Curry Beef with Coconut Milk

For the seasoning

Beef chunks

Curry powder

Worcestershire sauce

Pimento peppers
finely diced

For the stew

Instructions
In a bowl, season the beef with all the seasonings listed above. Let it marinate for 4 hours or overnight.
Heat a large pot with oil over medium-high heat, sear the meat and the veggies for 3-4 minutes.
Stir in the water, coconut milk, curry, salt, tomato paste, thyme and parsley.
Lower the heat to low and let the meat cook for 1 & 1/2 hour then add the potatoes and let it cook for an additional 20-30 minutes.
