Cream Cheese Oatmeal Pancakes

Tasty pancakes don't always have to be full of carbs. This cream cheese oatmeal pancakes recipe will show you that you can enjoy tasty low carb pancakes.

Ingredients

  • 8 oz Cream cheese
  • 2 medium Eggs
  • 2 cups Rolled or Instant oats
  • 1/4 cup Oat milk or Whole milk
  • 1 tbsp Granulated sugar
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/8 tsp Salt

Instructions

Making the oat flour:

  • In a blender, add the oats and pulse until the oats are fine like flour.
  • Set aside.

Making the pancakes:

  • In a medium mixing bowl, add the cream cheese, eggs and the vanilla extract.
  • Whisk the ingredients together until the mixture is smooth.
  • Pour the oat flour into the cream cheese mixture. Mix until everything is well incorporated.

Cooking the pancakes:

  • In a skillet over medium heat, wipe the pan with butter.
  • Scoop at least 1/4 cup of batter into the pan.
  • Cook the pancakes on each side for 5-7 minutes.
  • Pour some maple syrup onto them. Serve and enjoy!
