This Caribbean fry bake and saltfish recipe is delicious. Not only is the saltfish tasty, by the fry bakes are also delicious. You will love it.

Ingredients
For the fry bake:
2cupsAll-purpose floursifted
2cupsOilfor frying
1/4cupWarm water
2tbspButterat room temperature
2tbspGranulated sugar
2tspBaking powder
1tspSalt
For the saltfish:
1lbSaltfishprepared
3-4sprigsThyme
3-4sprigsParsleychopped
2sprigsScallionschopped
2mediumGarlic clovesminced
2mediumPimento pepperschopped
1mediumBell peppersliced
1mediumOnionsliced
4tbspOlive oildivided
2tspTomato paste
1/4tspBlack pepper
Half of a lime
Saltonly if necessary
Instructions
In a mixing bowl, mix together the flour, salt and sugar.
Add the butter and crumb together then gradually mix in the water.
Knead the dough on a floured surface or in the bowl for at least 1 minute. Form into a ball. Cover with a towel and let it rest for 30 minutes to an hour.
Divide the dough into 6 even balls. Take each balls and flatten them out into a circles but not too flat. They should each be 1/4 thickness.
Heat a pot with oil, enough oil to deep fry the bakes. when it is hot, add the bakes and let it cook for 3-5 minutes on each side.
When the fry bakes are down, place on a plate with a paper towel to drain the excess oil.
In a skillet or frying pan, heat the 2 tbsp of oil then cook the onion, scallions, bell peppers, pimento peppers and garlic. Cook for 2-3 minutes.
Add the saltfish and cook for 2-3 more minutes then add the tomato paste, the rest 2 tbsp of oil, salt (if needed), black pepper and lime juice.
Cook for 5-7 more minutes.
Notes
To enjoy it, simple stuff the bakes with the saltfish or just serve the saltfish along with the bakes.
