Caribbean Brown Stewed Turkey Wings

You will never want to enjoy turkey wings another way after having these Caribbean Brown Stewed Turkey Wings.They are packed with flavor and deliciousness.

Ingredients

The seasoning:

  • 6 Turkey wings
  • 2 tbsp Maggi seasoning sauce or alternative
  • 4 tsp Paprika
  • 2 tsp Garlic powder
  • 2 tsp Salt
  • 1/2 tsp Black pepper

The browning:

  • 2 tbsp Brown sugar
  • 1/4 cup Vegetable oil

The base:

  • 3 & 1/2 cups Water
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4-6 springs Fresh parsley chopped and remove the branch
  • 4 springs Fresh thyme
  • 2 medium Garlic cloves minced
  • 1 medium Onion diced
  • 1 medium Bell pepper diced
  • 2 Pimento peppers diced

Instructions

Seasoning the wings:

  • In a bowl, mix together the wings, maggi sauce, salt, black pepper, garlic powder and paprika.
  • Cover and let it marinade overnight or at least 4 hours.

Making the browning:

  • Warm a large pot over medium-high heat, add the oil.
  • Once the oil is warm, spread the sugar evenly into the oil and let it caramelize for about 1-2 minutes without stirring.
  • Place the wings in the caramel and cook for 5 minutes on each side. You may need to work in batches.
  • Remove the wing from the pot and set aside.

Making the base:

  • Cook the bell pepper, pimento pepper, garlic and onion for 2-3 minutes.
  • After the 3 minute mark, add the wings, water, tomato paste, salt, black pepper, thyme and parsley.
  • Stir everything and lower the heat to low and let it cook for 1 to 1 & 1/2 hours.

Notes

  • Maggi seasoning sauce alternatives: soy sauce or Worcestershire sauce.
  • Serve with rice and peas, plantains and cole slaw
