Caribbean Boiled Coconut Dumplings

In the Caribbean, dumplings are boiled, fried and served as a side or in a soup. This version is the traditional Caribbean boiled coconut dumpling.

Ingredients

  • 4 cups All-purpose flour
  • 2 cups Freshly grated coconut
  • 1 cup Water (may need more or less)
  • 4 tbsp Butter at room temperature
  • 2 tbsp Sugar
  • 1/2 tsp Salt

Instructions

Making the dumplings:

  • In a mixing bowl, mix the flour, salt, sugar together then add the butter.
  • Gradually stir in the water using hands or mixing spoon.

Kneading the dough:

  • Knead the dough for about 5-7 minutes, the goal is for the dough to not stick to your hands and for it to be firm.

Boiling process:

  • Place a medium or large saucepan filled with water over medium heat. Add a generous amount of salt to the water and bring to a boil.
  • Break off pieces of the dough, roll into a ball then flatten. Place it in the boiling water. Repeat the process with the rest of the dough.
  • Boil the dumplings for 10 minutes or until they have risen to the top.
  • Serve with saltfish, stew chicken or oxtail. Enjoy!
