Caribbean Banana Bread

Ingredients

  • 2 cups All-purpose flour sifted
  • 1/2 cup Granulated sugar
  • 1/4 cup Vegetable oil
  • 2-3 Ripe bananas
  • 2 Eggs at room temperature
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp Fresh or ground cinnamon
  • 1/4 tsp Salt
  • 1/4 tsp Almond extract
  • 1/4 tsp Fresh or ground nutmeg
  • 1/8 tsp Fresh or ground ginger

Instructions

  • Preheat oven at 350°F/175°C. Grease a 9x5in. loaf pan and set aside.
  • In a mixing bowl, whisk together the vegetable oil, granulated sugar, vanilla extract, almond extract and eggs using a whisk or a hand/stand mixer. Mix everything together until fully combined. 
  • In a separate mixing bowl, mash the bananas then add the wet ingredients.
  • Sift in the flour, salt, baking soda, nutmeg and cinnamon using a sifter. Mix everything together. 
  • Once everything has been mixed together perfectly pour the batter into the loaf pan and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in comes out clean.
  • Let it cool and enjoy!
