Preheat oven at 350°F/175°C. Grease a 9x5in. loaf pan and set aside.
In a mixing bowl, whisk together the vegetable oil, granulated sugar, vanilla extract, almond extract and eggs using a whisk or a hand/stand mixer. Mix everything together until fully combined.
In a separate mixing bowl, mash the bananas then add the wet ingredients.
Sift in the flour, salt, baking soda, nutmeg and cinnamon using a sifter. Mix everything together.
Once everything has been mixed together perfectly pour the batter into the loaf pan and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in comes out clean.
