Baked BBQ Ribs & Plantain Fries

Ingredients

Dry rub:

  • 2 tbsp Brown sugar
  • 2 tsp Salt less or more
  • 2 tsp Dried thyme
  • 1 tsp Ground cayenne pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Black pepper
  • 1/2 tsp Ground allspice

Ribs:

  • 1 stack Spare ribs
  • 1 cup Barbecue sauce
  • 2 tbsp Worcestershire sauce
  • Dry Rub

Plantain fries:

  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2-3 Plantains (not completely ripe and not totally green)

Instructions

  • Preheat your oven to 350°F/180°C. Line a baking tray with parchment paper then foil paper.

Dry rub:

  • Mix all the seasonings in a bowl. Once all the seasonings are mixed well together, set it aside.

Baking the ribs:

  • Place the ribs on the baking tray, pat dry before brushing half of the Worcestershire sauce unto the ribs.
  • Brush on 2 tbsp of the dry rub, making sure to cover the ribs. Flip the stack of ribs and repeat these steps on the other side.
  • Once the meat is fully covered on both sides. Cover with an additional foil paper, make sure to cover well.
  • Bake for 2 hours.

Covering with the sauce:

  • After the 2 hour mark remove from the oven and brush with bbq sauce on each side. Return to the oven for 10-15 more minutes at 350°F/180°C.

Plantain fries:

  • Cut the ends off, then cut through the skin from the top to the bottom and then peel it off.
  • Cut the plantain into two, then cut each half in half. Slice the plantains thinly into fries shape.
  • Season the fries with salt, pepper and olive.
  • Place on a baking tray lined with parchment paper for 15-20 minutes at 200°C/400°F.
