This vegetarian green papaya pie is a great tropical and vegetarian twist to the classic Shepherd’s pie. It is made with green papaya which replaces the mashed potato; Also it is filled with a tomato sauce filled with veggies instead of meat.

Papaya is a fruit that is grown throughout the Caribbean. Once it is ripe, you can it fresh or you can make juices, cakes, ice creams or even smoothies with it. But you can also use unripe papaya that is green to make savory dishes like this papaya pie.

Since green papaya isn’t ripe, it isn’t sweet so it is the best for any savory dishes you want to make. You can turn the unripe papaya into a salad or slaw or even into this vegetarian green papaya pie.

Vegetarian Green Papaya Pie

This vegetarian green papaya pie is a Caribbean twist to the classic Shepherd's pie. It is made with mashed green papaya and veggies.

Ingredients

For the green papaya base:

  • ⁣1 medium Green papaya cut into chunks
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

For the veggie base:

  • 8 oz Tomato purée
  • 3-4 sprigs Fresh parsley
  • 2 medium Carrots chopped
  • 2 medium Pimento peppers chopped
  • 2 medium Garlic cloves minced
  • 1 medium Bell pepper chopped
  • 1 medium Onion chopped
  • 1-2 Basil leaves
  • 1 cup Vegetable stock
  • 1/2 cup Frozen peas
  • 1/2 cup Frozen corn corn
  • 2 tbsp Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  • Boil the green papaya chunks for 30 minutes then drain and mash, season with salt and black pepper. ⁣
  • In a skillet over medium heat, warm the olive oil then cook the carrots, peppers, garlic and onion for 2-3 minutes. ⁣
  • Stir in the vegetable stock, tomato purée, thyme, parsley, black pepper and basil leave. Cook for 20 minutes.
  • Stir in the corn and peas and cook for 10-15 minutes more. ⁣⁣
  • Preheat the oven 200°C/400°F. ⁣
  • Pour the veggie base into a baking pan then top with the green papaya base. ⁣
  • Bake for 30-35 minutes then cool for 10 minutes.⁣
