Who said frozen cocktails are just for the summer? I know it’s winter but this Frozen Coconut Lime Daiquiri recipe can be enjoyed all year long.

A good cocktail makes me very happy. Cocktails are fairly easy to make at home and you can be creative with them. You can go from a simple drink to something fancy.

When I had my first daiquiri, I knew I had just discovered another favorite of mines and I was in love. It’s no secret that my ultimate favourite drink is Piña Colada and I even shared an amazing Lava Flow Strawberry Piña Colada recipe. But this Frozen Coconut Lime Daiquiri recipe is my second favourite.

You are probably reading this and wondering why I would be posting a frozen drink during winter, especially when there is snow falling.

Well my excuse for this post is that the biggest event in February is coming up this weekend. That is Super Bowl Sunday. So to help you along your party planning, I thought I would include this recipe.

Coconut lime daiquiri

This is a very simple and easy recipe, you only need few ingredients to make this cocktail and then you throw everything into the blender along with some ice and you have a cocktail.

You can always make it alcohol free by adding lime soda and coconut water. This will ensure that you get the same flavour.

Frozen coconut lime daiquiri

Servings 4 servings
Prep Time 10 minutes

Ingredients

  • 8 oz Coconut milk
  • 2 oz White rum
  • 1 oz Coconut rum
  • 1/2 cup Ice
  • 1/4 cup Fresh lime juice
  • 1/4 cup Simple syrup

Simple syrup:

  • 1 cup Sugar
  • 1 cup Water

Instructions

Simple syrup:

  • Add the water and sugar in a medium sauce pan, stir everything together and place over medium heat and let it simmer until the sugar has dissolved.
  • Let it cool completely.

Cocktail:

  • Add the lime juice, coconut rum, white rum, simple syrup, ice and coconut milk to the blender and blend for 2-3 minutes. 
  • Serve and enjoy!

Notes

The majority of this recipe is in cups instead of ounces like a regular cocktail recipe. The reason I used cups as a measurement, it’s simply because I want to appeal to the everyday cook and not a professional bartender.
