This Caribbean style curry chicken recipe is easy and delicious. We love this recipe so much that we had to share it with you guys.

Curry chicken is a huge thing in the Caribbean. Although, curry wasn’t created in the Caribbean, we love to cook with it. During the colonial era, Indian cuisine was introduced to the Caribbean, many of their spices were introduced to the Natives. One of those many spices was curry seasoning. We took the seasoning and made it our own, just like many other things.

Caribbean curry powder and Indian curry powder are different. The spices used are different and the taste is different as well. So we recommend choosing a Caribbean curry powder for this recipe. Although there isn’t anything wrong with the Indian brand, we just prefer the Caribbean brand.

Caribbean Style Curry Chicken

This Caribbean style curry chicken recipe is simple and delicious. It isn't a recipe that requires a lot of ingredients nor much time.

Ingredients

For the seasoning:

  • 8 Chicken thighs cleaned
  • 4 tsp Curry powder
  • 4 tsp Worcestershire sauce or browning sauce
  • 2 tsp Salt
  • 2 tsp Onion powder
  • 2 tsp Garlic powder
  • 2 tsp Dried thyme
  • 2 tsp Dried parsley
  • 1 tsp Black pepper

For the sauce:

  • 3 medium Garlic cloves minced
  • 3-4 medium Pimento pepper chopped
  • 1 medium Onion chopped
  • 1 medium Bell pepper sliced
  • 3-4 sprigs Parsley
  • 2-3 sprigs Thyme
  • 2 sprigs Scallions chopped
  • 2 cups Water
  • 1/2 cup Coconut milk
  • 3 tsp Curry powder
  • 2 tsp Tomato paste
  • 1 tsp Salt

Instructions

  • In a bowl, season the chicken with the curry powder, salt, black pepper, dried thyme, dried parsley, black pepper, onion powder, garlic powder and Worcestershire sauce or browning sauce.
  • Warm the oil in a pot then add the pimento peppers, onion, garlic, scallions and bell pepper. cook for 2-3 minutes.
  • Add the chicken and cook on each side for 5-7 minutes.
  • Stir in the coconut milk, water, tomato paste, thyme, parsley, curry powder and salt.
  • Stir everything together. Cover and let it cook for 30-40 minutes.
