So with pumpkin being in season, we had to use that opportunity to make these Caribbean pumpkin johnny cakes.

Johnny Cakes are also known as fried bake or floats. They are just a fried bread-like dish made with flour, baking powder, sugar, salt, butter and water. You can also add extras to your dough like we did, you can add coconut or pumpkin like us.

These cakes are versatile because they can be a side dish at any gathering, or you can enjoy it as a sandwich by stuffing things inside of it. We used our Caribbean pumpkin johnny cakes as an extra for our fall soups.

Caribbean Pumpkin Johnny Cakes

These Caribbean Pumpkin Johnny Cakes are a great way to take advantage of the pumpkins that are in season and making something quick and tasty.

Ingredients

  • 1/2 medium Pumpkin skin & seeds removed, cut into chunks
  • 2-3 cups Vegetable oil for frying
  • 2 & 1/4 cups All-purpose flour sifted
  • 1/4 cup Water (you may need less)
  • 2 tbsp Butter at roomtemperature
  • 3 tsp Granulated sugar
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cinnamon

Instructions

  • Boil the pumpkin for 25-30 minutes then purée it using a blender.⁠⁠
  • In a mixing bowl, add the flour, salt, baking powder, sugar, cinnamon and nutmeg. Mix everything.⁠
  • Mix in the butter, then add the pumpkin purée and gradually knead in the water.⁠⁠
  • Knead the dough on a floured surface until the dough isn't sticky and it's smooth. Cover and let it sit for at least 30 minutes.⁠⁠
  • Heat a frying pan with vegetable oil over medium heat.⁠ Roll the dough into a log, then into 10 equal balls. Flatten each ball. ⁠⁠
  • Fry each cake for 4-5 minutes on each side. ⁠
