In a mixing bowl, whisk together the pumpkin purée, sugar, egg, spices, vanilla extract and almond essence.
When everything is mixed together, gradually whisk in the flour and milk. Whisk until everything is combined then stir in the raisins.
Heat the oil in a frying pan over medium-low heat; Once the oil is warm, pour a 1/4 cup of the batter into the oil.
When the sides are getting crisp and golden flip them. Cook on each side for 2-3 minutes or until they are golden. If you poke the center and it isn't cooked, lower the heat.
Once they are done cooking, remove from the pan and set on a plate covered with napkin to absorb the excess oil.
