Being from the Caribbean means that I was exposed to various dishes that were bursting with flavours and sometimes spiciness. This is one of those dishes that remind me of my upbringing and the amazing food I grew up on.

These jerk chicken tacos were amazing and I loved every single bit of it. You guys know that I love a simple recipe, simplicity and delicious are my two favourite words on this blog. Making simple and delicious recipes is something I try to take seriously.

To make this recipe I used my Homemade Jerk Marinade recipe that I posted on the blog. I’m not claiming to have the authentic jerk marinade recipe, but it’s just my take on the recipe.

The very first time I made this recipe I used pulled chicken but after testing this recipe couple more times I found that grilled chicken is best. When you grill your chicken after it has been marinating in the marinade, the flavour of the spices really come to life.

Since Jerk has a decent kick to it, I topped the tacos with a sweet coleslaw.

It’s simple to make this sweet coleslaw, all you need is mayo, sugar and cabbage. Now for a little extra flavour, I added the juice of half a lime.

Jerk Chicken Tacos

Servings 4 servings

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 4 Corn or flour tortillas
  • 2 Chicken breasts clean and pat dry
  • 1 cup Purple cabbage shredded
  • 1/2 cup Jerk marinade homemade or store brought
  • 1/4 tbsp Mayonnaise
  • 2 tbsp Olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

Cook the chicken:

  • Season the chicken with the jerk marinade, salt and black pepper on each side. Let it marinade for at least 1 hour.
  • Cook on a stovetop grill or outdoor grill(if you own one) or frying pan over medium heat. Cook on each side for 5-7 minutes. Set aside and let it cool.
  • Once the chicken has cooled cut into slices and set aside.

Make the slaw:

  • In a bowl, add the shredded cabbage, mayonnaise, lime and sugar. Stir everything together.

Assembly:

  • Place the chicken on each tortilla then top with the slaw. You can also squirt some more lime juice on top as well.
